Revenge of the Homemade Mayonnaise

I love mayonnaise. And I used to spend a lot of hard earned money on buying the zero nutritional value ‘mayo’ from stores.

It is not that I did not try. I tried. And failed. Each time.

I finally concluded:

a) Olive oil sold in India is adulterated
b) Eggs sold in India are adulterated
c) Blenders sold in India are sub-standard
d) Making mayonnaise is Rocket Science

I do not give up very easily. I have repeatedly tried saving my mayo from breaking, and it was finally a’ Foolproof Homemade Mayonnaise’ video that I stumbled upon, which led to my victory after over after half a decade of warfare.

3/4 cup of Extra Virgin Olive Oil
1 Egg Yolk
Pinch of Sugar
1/2 tsp Salt
1/2 tbsp Apple Cider Vinegar
1/2 tbsp Lemon Juice
Optional – Fresh Garlic, Fresh Herbs, Pepper, Grainy Mustard

Put everything into your mixing container. Run it. All together. Done.

So what have I been doing wrong?

I have been using a hand blender in a wide mouth container to blend everything together. You can use a hand blender – just that the ‘container’ has to be a long jar, otherwise goodbye emulsification. And push the rod so that the blender touches the base.

My mayo has not failed every since.

But what if does?

Apply everything on your hair, cover it a shower cap, let it sit for at least an hour and then shampoo it off.
